I decided that it was time to provide you with some DELICIOUS, EASY and HEALTHY recipes created by Nutritionists for your children! The first two recipes came from my book The Resourceful Mother’s Secrets to Healthy Kids and the last one came from my wonderful friend, a fellow nutritionist, Nancy Morency. Banana Mama Muffins
3 Bananas (approx 1 cup) mashed
3/4 cup Sucanat
1 Egg
1/3 cup Olive oil
1-1/2 cups Spelt flour
1 tsp Baking soda
1 tsp Baking powder
1/2 tsp Sea salt
1/2 cup Chocolate chips
Directions:
- Preheat oven to 375 degrees Fahrenheit
- Mash bananas
- Add Sucanat, egg and olive oil to bananas
- Mix the rest of the dry ingredients together and add to moist ingredients
- Fold in chocolate chips
- Oil muffin tins with paper towel
- Bake for 18-20 minutes
Makes one dozen muffins
Crunchy Chocolate Chippers
2-1/3 cup Spelt flour
1/2 tsp Baking soda
3/4 cup Apple juice concentrate, thawed, or 1-1/4 cup apple juice concentrate, depending on the degree of sweetness desired or simply add maple syrup (to taste)
1/2 cup Olive oil
3/4 cup Unsweetened milk-free carob or chocolate chips (optional)
Directions:
- Preheat oven to 350 degrees F
- If you like your cookies fairly sweet, boil 1-1/4 cup apple juice concentrate down to 3/4 cup in volume and allow it to cool
- For minimally sweetened cookies, use 3/4 cup apple juice concentrate
- Stir together the flour and baking soda in a large bowl
- Mix the oil and apple juice concentrate and stir them into the flour mixture until they are just mixed in
- Fold in the carob or chocolate chips
- Drop the dough by heaping teaspoons onto a lightly oiled baking sheet
- Bake them for 10-14 minutes or until they begin to brown
Moist, Flavourful Gluten-free Muffins
1 cup brown rice flour
1/2 cup ground almonds
1/2 cup sorghum flour
1/3 cup melted coconut oil
1 cup coconut sugar
1 egg
1 cup rice or almond milk
1 tsp. vanilla
1 tsp. baking powder
1/2 tsp. xanthan gum
1/2 cup of flavour ingredients, examples: blueberries, chocolate chips, chopped nuts, dried fruits etc.
Directions:
- Preheat oven to 325 degrees convection
- In a medium bowl, mix melted coconut oil, coconut sugar and egg until smooth
- Add baking powder, xanthan gum and vanilla until completely blended
- Add all 3 flours and half of the milk
- Stir to blend and then add remaining milk
- Once well blended, add the flavour ingredient(s) of your choice.
- Spoon into 12 muffin cups and bake for approximately 25 minutes or until center is set.
